SAUCE

Sunion Vinaigrette

INGREDIENTS
Approximately ½ of an average sized Sunion sweet onion, diced (5.6 oz)
Heaping ½ Tablespoon of white sugar (.6 oz)
½ teaspoon of kosher salt (.2 oz)
½ teaspoon of garlic, freshly minced (.2 oz)
4 Tablespoons of extra virgin olive oil (2 oz)
6 Tablespoons of white vinegar (3 oz)
INSTRUCTIONS

1. Place onion in blender.

2. Add sugar, salt, garlic, white vinegar and puree until smooth.

3. Slowly add olive oil until incorporated.

4. Refrigerate until ready to use.
