Onion Mediterranean Vegetarian Sandwich

INGREDIENTS
6 pounds Jumbo yellow onions, peeled and cut into ¼-inch slices
⅓ cup minced fresh garlic
48 2-ounce eggplant slices
1½ cup prepared pesto
48 2-ounce roasted sweet red peppers, halved
48 1-ounce slices of provolone, gorgonzola, feta or mozzarella cheese
24 6-inch rolls (ciabatta, Italian or French bread) halved and lightly toasted
INSTRUCTIONS

2. Arrange onion and eggplant in a single layer on spray-coated baking sheets. Spread garlic over onion.

3. Bake at 400° until tender, about 20 minutes. To assemble the sandwiches, spread the pesto on the sliced bread. Top with eggplant mixture, sweet red peppers, and cheese.
